Discover Japanese Fermentation

Taste slowly. Learn deeply.

Fermentation in Japan is shaped by climate, local ingredients, regional traditions, and the knowledge of its artisans. Just as terroir shapes wine, these differences can be tasted.

Through tasting, cooking, and conversation, you will connect place, ingredients, technique, and flavor—turning knowledge into something you can see, smell, and taste. You will discover not only how Japanese fermented foods are made, but why they taste the way they do.
